The Farm to Fork fresh produce box has been a huge success. The partnership between Campus Dining and the Sustainable Development Teaching & Research farm started only two weeks ago and was met with overwhelming excitement. In the first week, there were 12 boxes available, which sold out in under 15 minutes. Priced at $25 a box, this is an incredible value for sustainably farmed, local produce. Interest has been so great that 160 Appalachian faculty and staff signed up to be informed of future box releases, and the number continues to grow. In the second week, the farm expanded to 20 boxes to address the demand for their fresh produce. This creative solution to using the fresh produce that would normally be used in Campus Dining has proved to be an excellent service to the Appalachian community.
